Honey Nut Oatmeal Cookies

Here's chewy, nutritious cookie for lunchbags or school snacks.
Ingredients:
3/4 cup butter
3/4 cup packed brown sugar
1 large egg
1/4 cup honey
1 teaspoon vanilla
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups quick-cooking rolled oatst (not instant)
1 cup sweetened flaked coconut
1 cup raisins
3/4 cup chopped pecans
Directions:
- In large bowl, with electric mixer, cream butter and brown sugar until fluffy.
- Beat in egg, honey and vanilla.
- In separate bowl mix together flours, baking powder and salt; stir into creamed mixture.
- Stir in oats, coconut, raisins and pecans; chill dough for 30 minutes.
- Drop dough by tablespoonfuls onto lightly greased baking sheets about 2-inches (5 cm) apart.
- Bake in 375° F (190° C) oven for 10 to 12 minutes or until lightly browned.
- Let cool on baking racks.
Makes 3 to 4 dozen.
