Peanut Butter Cookies


Ingredients:


1 cup unsalted butter, softened
1¼ cups smooth peanut butter
1 cup white granulated sugar
1 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
Pinch of salt

Directions:
  • In a large mixing bowl, cream the butter and mix in peanut butter.
  • Add white and brown sugar and continue mixing.
  • Add the eggs and vanilla and mix until combined.
  • Sift together flour, pinch of salt and baking soda and add to the butter mixture. The dough should be soft.
  • Form a teaspoon at a time into a ball and place on an ungreased cookie sheet. Press a floured fork across the middle of each to flatten slightly.
  • Preheat oven to 375°F (190°C).
  • Bake for 12 to 15 minutes or until lightly browned.

Makes 60 small cookies.
