Peanut Butter Cookies

Ingredients:
1 cup unsalted butter, softened
1¼ cups smooth peanut butter
1 cup white granulated sugar
1 cup brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
Pinch of salt
Directions:
- In a large mixing bowl, cream the butter and mix in peanut butter.
- Add white and brown sugar and continue mixing.
- Add the eggs and vanilla and mix until combined.
- Sift together flour, pinch of salt and baking soda and add to the butter mixture. The dough should be soft.
- Form a teaspoon at a time into a ball and place on an
ungreased cookie sheet. Press a floured fork across the middle of each
to flatten slightly.
- Preheat oven to 375°F (190°C).
- Bake for 12 to 15 minutes or until lightly browned.
Makes 60 small cookies.
