Learn how to make fabolous desserts every time you decide to prepare them. If you are not fan of coffee, remove it from the ingredients for a simple creamy chocolate truffle.
2 cups semi-sweet mini chocolate chips or dark cooking chocolate chopped into small pieces
1 cup full fat coconut milk or other full fat milk of your choice
1/2 cup coconut butter
2 to 3 teaspoons instant coffee grounds (optional)
2 tablespoons hot water
Some sifted unsweetened cocoa powder for rolling.
1. Melt instant coffee in hot water; set aside.
2. Place all ingredients on the top of a double boiler over high heat. Add instant coffee if desired and stir until melted. Mixture will be very dark, smooth and glossy.
3. Cover and refrigerate melted mixture for at least 5 hours or overnight.
4. When ready to make truffles, scoop out some of chilled chocolate mixture and roll into 1-inch balls.
5. Roll balls in cocoa powder, cover and place in refrigerator until needed.
