Festive popcorn will make a great foodie gift and tasty snack for people who love corn. Just wrap in some nice box or use some nice tray, cellophane and pretty ribbon.
5 cups popped organic corn
1/2 cup organic coconut sugar
1/2 cup honey
1/2 cup almond butter
1/2 cup semi-sweet chocolate chips
1. Line a large cookie sheet with waxed or parchment paper. Set aside.
2. In a heavy saucepan, over medium heat, stir honey, coconut sugar and almond butter until it starts to bubble.
3. Remove from heat and pour over popcorn. Stir with a wooden spoon until all the popcorn is coated.
4. Quickly shape coated popcorn into 2-inch balls and place on a lined cookie sheet. If desired insert a lollipop stick into each popcorn ball. Let cool.
5. In a double boiler, over high heat, melt the chocolate chips. Drizle the melted chocolate over the cooled popcorn balls. Let the chocolate harden before serving.
