Country Quiche
|

Ingredients:
2 tablespoons dry bread crumbs
2 cups diced cooked ham, chicken, or turkey
1½ cups chopped cooked vegetables
1/2 cup chopped green onions
1½ cups shredded Swiss or Cheddar cheese
5 eggs
2 cups milk
1/2 teaspoon salt
Cayenne pepper, to taste
Directions:
- Sprinkle bread crumbs over bottom of well-buttered 15 x 10-inch (40 x 25 cm) jelly-roll pan.
- Scatter ham, chicken or turkey, cooked vegetables, green onions, and cheese in pan.
- Beat together eggs, milk, salt, and cayenne pepper just until blended. Pour over ingredients in pan.
- Bake in preheated 350°F (180°C) oven for about 25 minutes
or until egg mixture is just set. Do not overbake. Let stand 5 minutes.
- Cut into rectangles and serve hot, warm or at room temperature.
Makes 6-8 servings.

To ascertain the freshness of an egg without breaking it, hold your
hand around the egg toward a bright light or the sun and look through
it. If the yolk appears quite round and the white clear, it is fresh.
If you put egg in a bucket of water and it falls on its side, it is
fresh. If it sort of topples in the water, standing on its end, it is
fairly fresh, but, if it floats, beware of it.
The shell of a fresh
egg looks dull and porous. As it begins to age, the shell takes on a
shiny appearance.
If an egg is kept any length of time, a portion of
its water evaporates, which leaves a space in the shell, and the egg
will "rattle." An egg that rattles may be perfectly good, and still
not absolutely fresh.
