This egg salad is reat to serve on crackers, French bread, English muffins, Melba toast, tea biscuits or wrapped in soft flour tortillas.
7 hard-cooked eggs, peeled and coarsely chopped
4 tablespoons finely chopped celery
1 tablespoon finely chopped green onion or fresh chive
1 tablespoon sour cream or plain yogurt
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
Ground black pepper and onion salt to taste
1. In a medium bowl, combine eggs with celery, green onion or chive, sour cream or yogurt, mayonnaise, mustard, onion salt and pepper.
2. Cover and refrigerate for at least two hours before use.
3. Serve on crackers, French bread, English muffins, Melba toast, tea biscuits or wrapped in soft flour tortillas.
