Bread Griddle Cakes
Ingredients:
4 cups milk
2 cups fine bread crumbs
3 eggs
1 tablespoon butter, melted
1/2 teaspoon salt
1/2 teaspoon baking soda, dissolved
in warm water
1/2 cup all purpose flour
Preparation:
- Heat the milk until boiling hot.
- Soak the bread crumbs into the boiling milk and let stand for ten
minutes in a covered bowl, then beat to a smooth paste.
- Add the yolks of the
eggs well whipped, the butter, salt, soda, and finally the whites of the eggs
previously whipped stiff, and add half of a cup of flour.
- Cook immediately on a hot greased griddle and serve warm.
