Corn Meal Griddle Cakes
Ingredients:
1½ cups corn meal
1½ cups
boiling water
3/4 to 1
cup milk
1 tablespoon
shortening
1 tablespoon
molasses
1/2 cup gluten free
flour
1 teaspoon salt
4 teaspoons
Baking Powder
Preparation:
- Scald
corn meal with boiling
water; add milk, melted shortening and molasses.
- Sift together gluten free flour, salt and baking
powder and add to the corn mixture.
- Mix well
and bake on hot
greased griddle until brown.
- Serve immediately with butter and syrup.
NOTE: Regular all-purpose flour can be used instead of gluten free flour for standard version.
