Currant Fritters
Ingredients:
2 cups dry, fine bread crumbs
2 tablespoons flour
2 cups milk
1/2 pound
currants, washed and well dried
5 eggs, separated
1/2 cup powdered sugar
1 tablespoon butter
1/2 teaspoon ground cinnamon
1/3 teaspoon ground nutmeg
Preparation:
- Boil the
milk and pour over the bread crumbs.
- Mix and
put
in the butter. Let it get cold.
- When
cold, beat in the yolks and sugar. Add the seasoning,
flour and stiff whites.
- Add in
the currants dredged whitely with flour.
The batter should be thick. Drop mixture in spoonfuls into the hot lard
or vegetable oil and
fry.
- Drain
them on paper towel, sprinkle with powdered
sugar and
send hot to the table.
