Old Spider Corn Cake
Ingredients:
2 eggs
1/4 cup sugar
1 cup milk
1 cup sour milk
1 teaspoon soda
1 teaspoon salt
1¾ granulated
corn meal
1/3 cup flour
Preparation:
- Beat
two eggs and one-fourth
cup sugar together. Then add one cup milk and one cup of sour milk
in which you have dissolved one teaspoon of baking soda.
- Add a
teaspoon of
salt to the mixture; then mix in granulated corn meal and one-third
cup flour.
- Put a
spider or skillet on the range and when it is
hot melt in two tablespoons of butter. Turn the spider so that the
butter
can run up on the sides of the pan.
- Pour in
the corn-cake mixture and add one more cup of sweet milk, but do not
stir afterwards.
- Put this
in the oven and bake from twenty to thirty-five minutes.
NOTE: When done,
there should be a streak of custard through it.
