Steamed Graham Bread
Ingredients:
1 cup all purpose flour
2 cups graham flour
2 cups corn meal
1/2 teaspoon salt
1 teaspoon baking soda
1 cup molasses
3½ cups of sour milk
NOTE: This recipe is for sour milk. If regular milk is used, use baking powder
in place of baking soda.
Preparation:
- Mix all purpose flour, graham flour, corn meal, and salt together.
- Mix molasses with 3 cups of sour milk and add to the dry mixture.
- Disolve baking soda in 1/2 cup of sour milk, add to the mixture and beat well.
- Transfer bread dough to greased mold and steam for 3½ to 4
hours.
TIP: This steamed bread is improved by setting
it into the oven fifteen minutes after it is slipped from the mold. Most excellent when is served warm with butter.
