CITRON POUND
CAKE
Ingredients:
2 cups butter
2 cups powdered sugar
1 quart of flour
1/2 teaspoon salt
8 eggs, separated
1/2 cup Brandy
1/4 lb citron, cut into thin slices and floured
Directions:
- Stir butter to a
cream, then beat in the following ingredients each one in succession: powdered sugar, flour, salt, brandy, and beaten egg yolks.
- Beat egg whites into stiff froth and fold into cake mixture.
- Add a quarter of a pound of citron cut into thin slices and
floured to the mixture.
- Line two cake pans with buttered paper and turn the cake
batter
in.
- Bake in a moderate oven about three-quarters of an hour.
