COCONUT POUND
CAKE
Ingredients:
1/2 cup butter
2 cups sugar
1 cup milk
5 eggs, separated
1 teaspoon baking soda
2 teaspoons cream of tartar
4 cups flour
1 cup grated coconut
For Topping:
Frosting (optional)
1/2 cup grated coconut (optional
Directions:
- Sift flour with baking soda and cream of tartar; set aside.
- Beat the butter and sugar until very light; to which
add
the beaten egg yolks and milk; set aside.
- Beat egg whites into stiff froth; gradually add sifted flour and beaten egg whites to the butter mixture.
- After everything is mixed together, add grated coconut and mix until just combined.
- Line the cake-pans with paper well buttered, fill rather more than half
full and bake in a moderate oven.
- If desired, spread over the top a thin frosting,
sprinkled thickly with grated coconut.
