FRUIT FILLINGS FOR LAYER CAKES
ORANGE
CAKE FILLING
Ingredients:
2 large oranges
1/2 lemon
1 cup sugar
2 egg whites
Directions:
- Peel two
large oranges, remove
the seeds, chop them fine, add half a peeled lemon, one cup of sugar
and
the well-beaten egg whites.
- Spread filling between the layers of the cake.

FILLING
Ingredients:
1 lb dried figs
1 cup water
1/2 cup sugar
Directions:
- Take a
pound of figs, chop fine,
and put into a stewpan on the stove; pour over them one cup of
water
and add a half cup of sugar. Cook all together until soft and smooth.
- When
cold spread between layers of cake.

MIXED FRUIT
FILLING
Ingredients:
4 tablespoons chopped lemon
4 tablespoons chopped raisins
1/2 cup finely chopped blanched almonds
1/4 lb finely chopped figs
3 egg whites
1/2 cup sugar
Directions:
- Mix four
tablespoons of very finely
chopped citron, four tablespoons of finely chopped seeded raisins, half
a cup of blanched almonds chopped fine, also a quarter of a pound of
finely chopped figs.
- Beat the whites of three eggs to a stiff froth,
adding
half of a cup of sugar; then mix thoroughly into this all of
the
chopped ingredients.
- Put filling between the layers of cake when the cake is
hot, so that it will cook the egg a little. This is delicious.
