OLD FASHIONED SPONGE
CAKE

Ingredients:
2 cups sifted icing sugar
2 cups flour
10 eggs, separated
Pinch of salt
1 teaspoon lemon rind
1 tablespoon lemon juice
2 teaspoons baking powder (optional)
Directions:
- Sift two cups of flour; set aside. If you are using baking powder, sift the flour with baking powder.
- Stir the yolks and
sifted sugar together until perfectly light; add a pinch of salt and flavor with lemon.
- Beat the
whites
of the eggs to a very stiff froth; add them with the flour gently to the yolk mixture.
- Bake in a moderate oven for about
forty to forty-five
minutes.
NOTE: Baking powder is an improvement to this cake, using two
teaspoons.
