Ingredients: 1 cup of brown sugar
1-1/2 cups of flour
1/4 teaspoon of baking soda
2 teaspoons of baking powder
1 teaspoon of ginger
2 teaspoons of cinnamon
1/2 teaspoon of nutmeg
2 tablespoons of shortening
1 egg, well-beaten
6 tablespoons of strong
coffee
Preparation:
Sift all dry ingredients together
with flour and mix them thoroughly.
Rub shortening into the flour
and spice mixture.
Add one well-beaten egg and
6 tablespoons of strong coffee to that mixture and knead dough well.
The dough must be fairly soft.
If necessary, add more coffee.
Roll out 1/4 inch thick on slightly
floured pastry board.
Cut with animal cutters and
then bake on a baking sheet in a moderate oven for ten minutes.
Cool and then wash with a mixture
of syrup and water and roll in confectioner's sugar.
Sugar Syrup Wash:
3 tablespoons of sugar syrup
(or any other syrup of your choice)
