SOFT COOKIES

Ingredients:

1 cup of molasses
-
6 tablespoons of shortening
-
1 teaspoon of ginger
-
1-1/2 teaspoons of cinnamon
-
1/2 teaspoon of allspice
-
1 egg
-
1 cup of sour milk
-
1 teaspoon of baking soda
-
7 cups of flour (a bit more
or less just to form soft dough)
Preparation:
-
Place in a saucepan one cup
of molasses and six tablespoons of shortening.
-
Bring to a boil and then add
one teaspoon of ginger, one and one-half teaspoons of cinnamon, and one-half
teaspoon of allspice.

Stir to blend and then take
from fire and let cool.
-
After that add one egg, one
cup of sour milk, and one teaspoon of baking soda.
-
Beat the ingredients with mixer
or in food processor to blend and then add sufficient flour to make a soft
dough that can be handled, usually about seven cups.
-
Form into little balls the size
of a walnut and then flatten slightly between the hands.
-
Bake on ungreased non-stick
cookie sheet or on buttered and floured inverted baking pan in a moderate
oven for about ten minutes.
