Strawberry Charlotte
Ingredients:
4 cups milk
6 egg yolks
3/4 cup sugar
1 sponge cake
Sweet cream
Fresh strawberries, sweetened to taste
6 egg whites
6 tablespoons sugar
Preparation:
- Make a boiled custard of one
quart of milk, the yolks of six eggs and 3/4 cup of sugar; flavor to taste.
- Line a glass fruit-dish with slices of sponge cake dipped in sweet cream;
lay upon this ripe strawberries sweetened to taste; then a layer of cake
and strawberries as before.
- When the custard is cold pour over the whole.
- Now beat the egg
whites over the steam to a stiff froth, add slowly six tablespoons of
sugar to the froth and keep beating until all sugar is in.
- Put over the top.
- Decorate the top with the largest berries
saved out at the commencement.
TIP: Raspberry charlotte
may be made the same way.
NOTE: If you don't like egg whites as topping, you can put whipped cream on the top.
