TOMATO
BRUSCHETTA
|
Ingredients:
6 cloves
garlic (mashed
and skin removed)
12 slices
Italian Bread
(or some other thick crusted bread) sliced 1/2 inch thick
Extra virgin
olive oil
Salt and
freshly ground
pepper to taste
3 cups of
fresh ripe plum
tomatoes (seeds removed)
12 fresh basil
leaves cut
into small pieces
NOTE:
Instead of fresh
basil leaves, you could use dried basil leaves or oregano.
Preparation:
- Preheat
a grill or charcoal
- Mash the
garlic cloves (just
enough to split and loosen the skin)
- Grill
the sliced bread to
a golden brown on both sides.
- Take the
bread off the grill
and while it is still hot, rub one side of each slice with the garlic.
- Put the
bread on a platter,
garlicky side up, and pour a thin stream of olive oil over each slice,
enough to soak it lightly.
- Sprinkle
with salt and a
few grindings of pepper.
- Top
bread with prepared
diced tomatoes and sprinkle with basil.
Makes 6 to
12 servings.
