Ingredients:
2 cups
of fruit puree
(raspberries, blackberries, blueberries, or a combination of berries)
2 Tbsp. lemon
juice
1 cup sugar
2 cups water
2 Tbsp. vodka
Preparation:
- Cook 2
cups of water and
1 cup of sugar for about 7 minutes. Set aside to chill completely.
- Clean
and wash the berries
and process in the blender or food processor to make puree, strain if
necessary.
- Measure
2 cups of puree and pour to a large bowl. Add sugar syrup, vodka
and lemon juice. Mix well and chill for about 1 hour.
- Pour
mixture into ice cream
maker and follow manufacturer's directions.
NOTE:
About
2 pounds of ripe berries will give approximate two cups of puree.
Makes 4-6
servings.
TIP: If
processing
berries in the blender or food processor, add 1/3 cup of water to the
blender
or food processor. That will help you to make a more smooth mixture.
If
processing berries with
seeds like blackberries or raspberries, it is a good idea to strain
them
to remove little seeds.
