2 cups melon puree
2 Tbsp lemon or lime juice
1 Tbsp. vodka
1/2 cup sugar
1 cup water, cold
Cook 1 cups of water and
1/2 cup of sugar for about 7 minutes. Set aside to chill.
Remove rind and seeds from
melon, cut into cubes and puree in a blender or food processor. One medium
size ripe melon will give approximately two cups of puree.
Combine 2 cups melon puree
(cantaloupe or honeydew), citrus juice, vodka and cold sugar and chill.
Pour mixture into an ice cream machine and follow manufacturer's directions.
Makes 4 to 6 servings.
