Ingredients:
2 cups ripe
peaches puree
(about 2 lb peaches)
2 Tbsp. lemon
juice
1 large
orange, juice only
2 Tbsp.
Amaretto
1 cup sugar
2 cups water,
cold
Preparation:
Cook 2 cups
of water and
1 cup of sugar for about 7 minutes. Set aside to chill.
Cut peaches
in half, remove
pits, peel and puree in a food processor or blender with orange juice.
Measure 2 cups puree and put in a large bowl mix together peach puree,
lemon juice, sugar syrup and liquor, chill.
Pour into
an ice cream machine
and follow manufacturer's directions.
NOTE: Instead of peaches,
you could also used ripe apricots or nectarines.
Makes 4 to
6 servings.
