Pollo
alla Cacciatora

Ingredients:
1 chicken
Salt to taste
3 oz. butter
1 tablespoon flour
1/2 pint stock 2 to 3 slices of bacon, chopped 2 to 3 slices of ham, chopped
2 tablespoons olive oil
3 large mushrooms,
sliced
1 medium onion
3 cloves
2 egg yolks
2 tablespoons cream
Tomato sauce or puree of tomatoes to taste
Directions:
- Cut up a chicken into quarters, season with salt to taste
and put it into a saucepan with three ounces of butter and a tablespoon
of flour.
- Put saucepan over medium heat,
and when chicken is well browned
add half a pint of stock, bits of bacon and ham, olive oil, three mushrooms
(previously sautéed), an onion
stuck with three cloves.
- When chicken is cooked skim off the grease,
pass the sauce through a
sieve, and add the yolks of two eggs mixed
with two tablespoons
of cream and than add either a puree of tomatoes
or tomato sauce.
