Quenelles of Chicken

Ingredients:
1/2 lb cooked chicken breasts 6 oz white bread crumbs
2 cups of milk
2 eggs
2 oz butter, melted Salt and pepper to taste
Preparation:

Chop finely and mash the chicken breasts to obtain a kind of paste.
- Soak the bread crumbs in milk for 5 to 10 minutes, than drain the milk to obtain some form of thick paste.

Combine the bread crumbs with the meat and add the melted butter.

Mix and season with salt and pepper to taste.
- Add 2 egg yolks and the whites beaten in snow.
- Form little pellets, roll them in a little flour and simmer them gently in boiling stock or water for 15 minutes.
