Quenelles of Chicken


Ingredients:

1/2 lb cooked chicken breasts
6 oz white bread crumbs
2 cups of milk
2 eggs
2 oz butter, melted
Salt and pepper to taste


Preparation:
  • Chop finely and mash the chicken breasts to obtain a kind of paste.
  • Soak the bread crumbs in milk for 5 to 10 minutes, than drain the milk to obtain some form of thick paste.
  • Combine the bread crumbs with the meat and add the melted butter.
  • Mix and season with salt and pepper to taste.
  • Add 2 egg yolks and the whites beaten in snow.
  • Form little pellets, roll them in a little flour and simmer them gently in boiling stock or water for 15 minutes.
