1 package cheese tortellini
(you could also use green or red tortellini)
3 tablespoons butter
1/2 cup finely chopped onion
1 clove garlic, minced
1-1/2 cups diced Roma tomatoes
1 cup cooked peas (the best
to use are fresh or frozen)
salt and ground black pepper
to taste
1 cup of Prosciutto cut
in thin strips
Cook tortellini according
to package directions and drain. In a large skillet, melt butter and add
onion and garlic. Cook over medium heat, stirring occasionally until tender
(for about 3 minutes). Add in tomatoes, peas, salt and pepper; cook just
until heated through, for about 3 minutes. Add hot tortellini and Prosciutto
and toss gently until just blended. Serve with freshly grated Parmesan
cheese and radicchio salad if desired. |
