Ingredients:
1 lb small yellow potatoes,
cooked and halved
1/2 small red onion, thinly
sliced
1/3 cup red wine vinegar,
divided
4-5 tablespoons of olive
oil
1 tablespoon Dion mustard
1 small head of Italian
rose radicchio, cored and chopped
Salt and ground black pepper
to taste
1/3 cup chopped parsley
Preparation:
In a medium size pot simmer
potatoes, completely covered in water, until tender (for about 15 min).
When ready, drain them, cut
in halves or quarters and place in large bowl with thinly sliced onion.
In a small bowl whisk together
vinegar, olive oil, mustard and salt and pepper to taste.
Pour dressing over potatoes
and toss.
Fold in radicchio and adjust
taste if desired.
Sprinkle with parsley and
serve immediately, or cover and chill up to 4 hours.
Makes 4-5 servings. |
