Homemade Pizza Pockets will help you to make your kids eat vegetables. They are tasty and easy to prepare if you have store-bought refrigerated pizza dough. You can also make your own pizza dough if you have time.
3 tablespoons butter, divided
2 tablespoons diced onion
1 medium red or green pepper, diced
1/2 cup broccoli florets, coarsely chopped
4 mushrooms, sliced
1/2 medium zucchini, diced
1/2 cup pepperoni, diced
1/2 cup spaghetti sauce
1 cup shredded mozzarella cheese
1 package store-bought refrigerated pizza dough
1. Preheat oven to 400º F (200º C).
2. Grease two baking sheets with 1 tablespoon melted butter or line with parchment paper and set aside.
3. Melt 2 tablespoons butter in a large skillet over medium heat. Add diced onion and pepper and cook for about 4 to 5 minutes, stirring often, or until softened. Add mushrooms, zucchini and broccoli and continue to cook, stirring often, for another 4 to 5 minutes. Stir in diced pepperoni and spaghetti sauce and cook for 1 to 2 minutes longer.
4. On a lightly floured surface, lay pizza dough and cut into 6-inch circles. You will have about 8 to 10 circles, depends on the dough.
5. In the middle of each circle, place 2 tablespoons shredded cheese. Top cheese with about 1/4 cup of vegie mixture. Brush edges of dough with a bit of water, fold in half, then roll and pinch edges together.
6. Place pocket on baking sheet and repeat with remaining dough and filling.
7. Bake pizza pockets for 15 to 20 minutes, or until lightly browned on top and bottom.
