Beef & Bulgur Burgers

Ingredients:
1/2 cup (125 ml) fine bulgur
1 cup (250 ml) boiling water
12 oz (330 g) lean ground sirloin
1 teaspoon chili powder
1/2 teaspoon salt
3 scallions, thinly sliced
1/2 cup (125 ml) chopped cilantro
1 pickled jalapeno, minced
4 cups (1 L) shredded Romaine lettuce
1/2 cup (125 ml) salsa
1/4 cup (60 ml) diced avocado
1/4 cup (60 ml) fat-free sour cream
Directions:
- Pour boiling water over bulgur in small bowl. Let stand until
softened, about 30 minutes. Drain through fine meshed sieve, squeezing
out as much liquid as possible. Transfer to large bowl and add beef to bulgur. Sprinkle
with chill powder and salt. Add scallions, cilantro, and jalapefio, and
mix to combine. Shape into 4 patties. (Recipe can be prepared ahead to
this point. Refrigerate patties up to 1 day.)
- Preheat broiler. Broil patties 4 inches (10 cm) from heat until cooked through, about 4 minutes per side.
- Arrange lettuce on 4 serving plates and top with burgers, salsa, avocado, and sour cream.
Makes 4 servings.
