Steak in Red Wine & Mushroom Sauce

Ingredients:
2 teaspoons butter
2 cups sliced mushrooms
1 tablespoon extra virgin olive oil
3/4 lb strip loin steak
Salt and black pepper to taste
3/4 cup dry red wine
2 tablespoons red wine vinegar or balsamic vinegar
1 tablespoon Worcestershire sauce
Directions:
- Heat butter in a medium frying pan over high heat. Add mushrooms
when butter is sizzling and cook about 3 to 5 minutes, until tender.
Remove from pan and set aside.
- Wipe pan with paper towel and add oil; heat over medium-high heat.
- Sprinkle both sides of steak with salt and pepper. Add steak to pan,
cooking about 4 minutes each side for medium rare. Reduce heat slightly
if necessary.
- Remove steak, set aside and covered loosely with foil to
keep warm.
- Drain half of the fat from pan. Add wine, vinegar and Worcestershire
sauce to pan, scraping up any brown bits from bottom of pan. Boil until
reduced to 1/2 cup.
- Stir in mushrooms, add salt and pepper to taste. Slice steak and serve, spooning mushroom sauce over top.
Makes 2 servings.
