Chocolate Tarts
|
Ingredients:
4 eggs, whites and yolks
2 squares semi-sweet cooking chocolate, grated
1 tablespoon corn starch
2 tablespoons water
3 tablespoons milk
4 tablespoons sugar
2 teaspoons vanilla
1/2 teaspoon cinnamon
1 teaspoon butter, melted
For Meringue:
2 egg whites
2 tablespoons sugar
1 teaspoon of fresh lemon juice
Directions:
- Rub the chocolate smooth
in the milk and heat to boiling over double boiler, then stir in the cornstarch dissolved in water.
Stir 7 to 10 minutes or until well thickened. Remove from the fire and pour into
a bowl.
- Beat all the yolks and the whites of two eggs well with the sugar,
and when the chocolate mixture is almost cold, put all together with the
flavoring and stir until light.
- Bake mixture in open shells of pastry.
- Make meringue from whites of two egg whites and 2 tablespoons of sugar; flavor with lemon juice. Set aside.
- When done,
cover with a meringue. Eat cold.
NOTE: These are nice
for tea, baked in patty-pans.
