Grilled Mussels

Ingredients:
2 dozen half shell mussels
2 tbsp raw honey
2 mandarina oranges (cut into segments)
Juice of one orange
4 tbsp extra virgin olive oil
1 tbsp chopped thyme
Preparation:
- Steam 2 dozen fresh mussels; (remove top shell)
- Mix honey, orange juice, olive oil and thyme together and pour over mussels. Leave to marinate at least 10 minutes.
- On a grill, cook mussels (shell side up) until golden brown.
- Garnish with fresh red peppers, scallion flowers, springs of fresh thyme, curley parsley and orange segments.
Makes 4 servings.
